Authentic Lecce pasticciotto recipe

The secret of this traditional pastry is simple: few genuine ingredients and some patience. A fragrant lemon shortcrust pastry and a smooth custard cream are all you need.

Ingredients (for 6 pasticciotti)

For the shortcrust pastry:

  • 300 g (2 ½ cups) all-purpose flour
  • 120 g (½ cup) sugar
  • 120 g (½ cup) butter
  • 2 eggs
  • grated lemon zest

For the custard cream:

  • 500 ml (2 cups) whole milk
  • 3 egg yolks
  • 120 g (½ cup) sugar
  • 50 g (⅓ cup) cornstarch
  • vanilla or lemon peel

For brushing:

  • 1 egg yolk

Step-by-step preparation

  1. Make the pastry: mix flour, butter, sugar, eggs, and lemon zest until smooth. Wrap and refrigerate for 30 minutes.
  2. Prepare the custard: heat the milk with vanilla or lemon. In another bowl, whisk yolks with sugar and cornstarch. Slowly pour in the hot milk, then cook over low heat until thick. Cover with plastic wrap and let cool.
  3. Assemble the pasticciotti: roll out the pastry and line oval molds. Fill with custard, cover with another pastry disc, and brush with egg yolk.
  4. Bake: 180°C / 350°F for about 25 minutes, until golden.
